I use this receipe as a base for most of my cakes and it has never let me down.....so I hope it won't let anyone down who tries it! You can use it for novelty cakes or as a victoria sandwich, I make my choc fudge cake using this as a base!
200g/8oz Chilled soft tub of margarine
200g/8oz Caster Sugar (ordinary sugar works as well)
4 Eggs - sizes 1-2
200g/8oz Self-raising flour
2 tsp Baking powder
8 drops Vanilla essence
Put all the above ingredients together in a mixing bowl and mix until the mixture is smooth and glossy. (In a food processor this will take 30 seconds - 1 min.)
Put the mixture in a prepared tin. Level the top and bake in the centre of the oven at 160 oC, 325 oF, gas mark 3. Bake for about 1 hour (slab cake about 40 mins).
This will make a 23cm(9") round or square tin. Also 29 x 21 x 4cm(11 1/2 x 8 1/2 x 1 1/2") slab cake.
Decorate as you wish. If you want to make it a Choccie cake substitue a little flour for cocoa powder!
