Chilli Pickle Recipe

as requested...

1kg diced apple
1.5kg diced onion
1kg tomatoes, skinned & chopped
750g diced courgettes
200g minced red chillis (I used hot ones & chucked them in a mini blender - no need to touch!)
750g white sugar
500ml cider vinegar
500ml white vinegar
3tbsp mustard seeds
1.5tbsp garam masala
0.5tbsp chilli flakes
300g tomato puree
small sprinkle of salt

Put everything in a pan and cook over medium heat, stirring regularly. When thick, cool slightly and put into sterilised jars.

I made half this quantity and I got 8 jars of assorted sizes, mostly small/medium. I added a bit more than a sprinkle of salt as I felt it needed it.
Not sure how long to let this one mature, but I think 4-6 weeks might be fine. I'm hoping it will get a bit firier as it's not quite as hot as I hoped, but does have a nice kick. It tastes a bit like a cross between a chutney and a salsa - I think that's because there's a lot of tomato puree in it.

Thank you Clare. I will print that off and add it to my ever growing collection of recipes. When I have time and the ingredients I'll try making a small quantity.

Hey, that sounds like a great recipe. Quite a lot of ingredients, though, so it might take a while to get all of them, but will certainly try to try it :D
