Sorry. Can't help. I only cooked squash once and it was a disaster.I have never cooked squash since ! :lol:

Hi Carolyn my favourite soups butternut squash heres my recipe I make it in the slow cooker.

Slow cooker low fat healthy butternut squash soup

1 butternut squash diced
1 Onion chopped
1 potato diced
1 apple diced

Roasted wedges/chunks are good - I sprinkle with olive oil, salt & dried chilli flakes, but you could add whatever you fancy.
Have a recipe for a roasted squash, mushroom & pasta dish if you are interested?

Roasted in chunks is good. Can also roast in halves and fill them with lovely stuff too but would need to ask my DIL what she fills them with (she is a vegetarian).

We cook it a lot, sometimes Acorn squash too. We microwave it 1st for 2 mins so it's easier to slice. Then we cut it in wedges and roast in the oven anytime we're cooking other oven dishes and have the oven on anyways. It's good sprinkled with olive oil and a little brown sugar, because it caramelises nicely :)

Ooh lots of ideas. I guess they are in season at the moment, and a good price.
