Here's my first attempt at 'altering'.
'before' (well from the same set) & after
Close-up of 'after'
So far I have only sealed it with a couple of coats of watered down PVA which won't be strong enough. Any suggestions for something more permanent?

That's fab - mega impressed. In fact I have a set of 6 placemats and coasters that I could attack ..... erm alter
As for sealing ................ I have used Diamond Glaze but wouldn't recommend it as it went quite streaky.
Mod Modge is good and applies well - but then I think Mod Podge is probably just a branded PVA type thing so you could be fine the way you are going.

That is awesome!
Having tried Modpodge I think it si a bit different to watered down pva. it dries qicker and doesn't wet the paper so much. BUT it's also about £4.50 a pop and having done 4 clipboards I have about 1/5 of a jar left. So you pays your money and takes your choice.

oooooooh I really like that, is it covered in paper or material?
I would suggest maybe spray varnish or clear car lacquer to seal it? wouls make it waterproof too.

Wow ..Truly wonderful Ruthie.
Can you possibly give a low down of how you achieved. Love how you have finished off the edges? How did you achieve? Love the glossy look, paper looks as though it looks like leather.

Thanks for all your lovely comments ladies.
As requested, here is a breakdown of what I did/used.
Equipment:
Old Laminated coaster (or new one if you are being flash  )
Black acrylic paint
Paper from the DCWV Retro stack as recommended on here (£2.99 from the Range)
Plain Card
Lettering - I used QK Katie Skinni mini
How to:
Paint the edges of the coaster and a little bit on the top to mask the original colour and allow to dry
Cut background paper to slightly smaller than the coaster (I rounded the edges of the paper with a punch)
Stick background paper to the coaster (I used permanent spray adhesive)
Build up the design with more layers of paper and lettering. Stick down as before.
Mine has been sealed with a couple of coats of watered down PVA which has given the fabric/leather effect, but as I said I am trying to find a more permanent way of sealing it.
