Maddy sent me a link the other day for a banana muffin recipe, it was from a crafty type blog i think but i cannot for the life of my find it.
The recipe involved using chunks of banana rather than mashed and it looked gorgeous. The blog was a very popular one i believe.
I'll have a look on the crafty blogs lists again, but would be most grateful if anyone has seen this and could pass the info on.

can't help either other than I have one on my blog - tbh you can mash or chunk a banana in any recipe. the banana loaf recipe on my blog I made loads of times and always mashed half the bananas and left the rest in chunks that I added at the end.

I seem to have a problem with my muffins being too heavy at the moment, they weigh a ton and are a little moist in the middle.....i wonder if i'm throwing in far too many bananas? I do like bananas. Calv. Muffins are not supposed to be over worked, you do need a raising agent such as baking powder generally. I started making my muffins in a big jug (got a plastic one from wilkos for around a £1) and mixed it in there and then poured into cases which made it easier to handle.

I agree with Carolyn, if you mix them too much they're tough. Don't worry if the mixture looks lumpy - its supposed to  You can use either plain or self raising flour. You still add baking powder with self raising flour just not as much. I find when I make fruit muffins that if its a to a base of 10oz of flour I find that 6oz of fruit is plenty. Much more than that and it spoils the balance of the mix. In my oven I cook them at 190c for around 16 minutes. If yours is a non fan oven you may need it a bit higher than that.
